Fritters of Zucchini and Flowers of Zucchini - Secondo
This is a delicious Italian recipes and this is the ideal period to cook it. In my kitchen garden the zucchini and the flowers of zucchini are growing, so I can pick them fresh and cook immediately. I like so much the possibility of prepare Italian dish with fresh vegetables: the recipes are better. This is a tasty recipe that you can prepare as a second course but also as an appetizer. INGREDIENTS (for 4 – 6 people): 150 g of Flour with yeast 200 – 250 ml of Milk 2 Egg whites 2 Zucchini 5 Flowers of zucchini Extra virgin olive oil for fry A pinch of salt
PREPARATION TIME: 15 minutes
COOKING TIME: 15 minutes
WINE: Colli di Luni Vermentino Doc (White Wine)
PREPARATION Mix in a bowl the flour with the salt, then add little by little the milk in order to not make lumps and mix until you obtain a creamy mixture, like that shown in the picture. Beat the egg whites till stiff then add them to the creamy mixture and mix. Now prepare the zucchini and the flowers of zucchini.
Clean them, chop the flowers of zucchini and then with the help of a grater cut the zucchini in order to obtain thin strips as shown in the picture below.
Mix the zucchini and the flowers of zucchini and add them to the creamy mixture. Heat the extra virgin olive oil in a pan, when it is hot place in it the mixture with the help of a spoon. Let the fritters fry until they become slightly brown. When they are ready let them drip from oil over a kitchen paper and then serve warm.

This is a delicious first course made with bacon and smoked Scamorza, a typical Italian cheese in particular in the southern part of Italy. Scamorza and bacon together are very good. Believe me!
INGREDIENTS (for 4 people): 400 g of Giant Fusilli 100 of Bacon in cubes 30 g of Butter 150 g of Smoked scamorza (Italian Cheese) 200 ml of Cream Salt Black pepper

WINE: Colli orientali del Friuli - Rosazzo rosso Doc (Red Wine)
PREPARATION Let salted water boil for fusilli. In the meantime prepare the sauce in this way: place in a pan the butter and the cubes of bacon and let them brown. Then add the cream and let it simmer for about 5 minutes. Cut the scamorza in cubes. When the water boils add the fusilli
and let them cook as indicated on the pack. When fusilli are ready, drain and put them on the pan of the sauce together with the scamorza. Mix all together in order to melt the scamorza. If you want you can sprinkle with some Parmesan: Serve hot! This is the result: BUON APPETITO!
