Fritters with Apples

Suitable for Vegetarians
Fritters with Apples
This is another traditional Italian recipe that is typical prepared in occasion of Carnival: it is easy to realize and as main ingredients you need only flour, sugar, eggs and the type of apples called Renetta or Stark that are sweet and floury. This fritters are delicious and prepared in all region of Italy in particular in Venezia where there are two different recipes of fritters of apple: one is this presented below, another one is that in which apples is cut as washers, covered with a liquid batter and fry. They are both delicious!

INGREDIENTS (for 4 – 6 people):
400 g of Flour
5 Tablespoons of Sugar
Spout
1 Grated lemon peel
16 g of Yeast for sweet
2 Eggs
300 ml of Water
5 Apples
Icing sugar
Extra virgin olive oil for fry

PREPARATION TIME: 1hour and 15 minutes

COOKING TIME: 20 minutes

WINE: Malvasia

PREPARATION
Mix in a bowl the flour, the sugar, the grated lemon peel, some spout and the yeast

then add the eggs and the water

and knead with a tablespoon in order to obtain a batter not much liquid now let the batter stand for 1 hour.

After this time clean, peel and cut in cubes the apples, add them to the batter and mix.

Preheat the extra virgin olive oil in a frying pan, place in it with a tablespoon some batter and fry it.

When the fritters become golden remove them from the oil

and place them over a sheet of kitchen paper to remove the excess of oil. Sprinkle the fritters with some icing sugar and serve them.

Friciò (Fritters of carnival)

Fricio-Fritters of Carnival






Friciò is a typical Italian recipe that comes from Piemonte. Friciò are fritters traditionally prepared in Piemonte in occasion of Carnival; they are simply prepared with flour, milk, eggs, yeast and sugar with the addition of the sweet raisins. In order to obtain a good result cook the Friciò always in a big quantity of hot but not boiled extra virgin olive oil and place in it, with the help of a teaspoon, a small quantity of the batter for each fritters.

INGREDIENTS (for 6 – 8 people)
250 ml of Milk
350 g of Flour
3 Eggs
50 g of Raisins
50 g of Sugar
A pinch of salt
10 g of Yeast for sweet
1 Grated lemon peel
Icing sugar
Extra virgin olive oil to fry

PREPARATION TIME: 15 minutes

COOKING TIME: 15 minutes

WINE: Malvasia

PREPARATION
Place the raisins in a bowl with water for about 10 minutes,

after this time drain them. In the meantime place the flour, the sugar and the yeast in a bowl and mix all together, then add the milk little by little and stir in order to obtain a batter thick and without lumps.

Add 1 grated lemon peel

and the eggs one by one by stirring;

at the end add the raisins.

Preheat in a pan about 200 ml of extra virgin olive oil, when oil is hot with the help of a teaspoon place in it some batter,

Friciò will blow up and rise to the surface of oil. It is important to cook not many friciò in the same time and always in a big quantity of hot oil. Cook Friciò until they become slightly golden,

then remove them from the oil and place them over a sheet of kitchen paper in order to remove the oil in excess. Then place them in a platter sprinkle with some icing sugar and serve them.

Fritters of Chestnuts

This is a typical Italian recipe that is prepared in autumn. This recipe explain the preparation of fritters made of chestnuts flour, but you can also use fresh chestnuts. In this case you must boil and sieve the chestnuts to obtain a puree. You can make variations adding to this simple Italian recipe some raisins, some chopped almonds or some chopped walnuts. You can serve them simply with icing sugar for a delicious dessert or as a snack, or with thin slices of lard for an unusual appetizer.

INGREDIENTS (for 4 - 6 people)
250 g of Flour of Chestnuts
1 Tablespoon of Sugar
1 Egg
100 ml of Milk
Extra virgin olive oil
Icing sugar
A pinch of salt

PREPARATION TIME: 10 minutes

COOKING TIME: 15 minutes

WINE: Dolcetto D'alba (Red wine)

PREPARATION
In a bowl put the flour of chestnuts, the sugar, the salt and the egg

and start to mix. Then add the milk

and continue to stir until until you obtain an homogeneous soft dough.

Preheat abundant extra virgin olive oil in a large pan. When the oil is hot make spoonfuls of the dough and put them into the oil

and cook until the surface of the fritters become golden. Then dry them with a napkin, let them cool and place them on a platter. Sprinkle with icing sugar as you like. This is the result:
