Risotto with Apple and Gorgonzola Cheese

Risotto with Apple and Gorgonzola Cheese
This is another delicious Italian recipes for Risotto. There is also in this risotto the presence of fruit like in the recipes of risotto with speck and pomegranate juice that I posted few days ago. In this case the apple is matched with Gorgonzola cheese. The preparation is very simple: you just need to peel and cut the apple and have in you fridge a little bit of Gorgonzola cheese, better if the Gorgonzola is the type sweet that is usually more cream and soft than the piquant type.

INGREDIENTS (for 4 people)
320 g or 2 cups of Rice type Arborio
1 Apple
3 Tablespoons of Extra Virgin olive oil
1 / 2 Onion
1 / 2 Glass of White wine
150 g or 3/4 cup of Gorgonzola cheese
Vegetable broth

PREPARATION TIME: 15 minutes

COOKING TIME: 20 minutes

WINE: Biferno Rosso Superiore Doc (Red Wine)

PREPARATION
Start preparing the vegetable broth, clean and peel the carrot, the potato, the onion, and the celery, cut them in big pieces and place them in a potful, add half a liter of water and a bit of coarse salt

and let it boil for about 30-40 minutes.

If you don't have a lot of time the best thing to do in order to have the same result is to use the pressure cooker, with which you will need only 10-15 minutes.When the vegetable broth is almost ready preheat the extra virgin olive oil in a casserole, cut the onion in thin slices, add them to the oil and let them brown. Clean and cut the apples in small cubes as shown in the picture and add to the onion, let them cook for a few minutes

then add the rice, let it toast for 2 minutes, add the white wine and let it evaporate.

Now you can start adding time by time the vegetable broth and cook the rice for about 18 minutes stirring continuously, paying attention not to cook it too much, the rice should be firm at the end of the cooking.

When the rice is cooked add the Gorgonzola cheese and stir in order to mix all the ingredients.

Apple Cake

Suitable for Vegetarians
Apple Cake
Apple cake is one of the easiest cakes to prepare that allows you to obtain a delicious dessert good for any type of occasions. Christmas is coming and apples can be used to prepare traditional Christmas desserts as strudel that is a one of the traditional desserts of Trentino Alto Adige. But if you have apples, not much time and you still want to obtain an excellent result you can follow the steps of this delicious Italian recipe to make your family very happy. You can also use this delicious recipe as a gift, it’s enough a good Christmas envelope and your friends will be really happy! MERRY CHRISTMAS!

INGREDIENTS (for 6 – 8 people):
150 g of Flour with yeast
200 g of Sugar
2 Eggs
100 ml of Milk
1 Kg of Apples
A pinch o salt
3 Tablespoons of extra virgin olive oil
A piece of butter for the pan

PREPARATION TIME: 15 minutes

COOKING TIME: 40 minutes

WINE: Passito di prosseco (White Wine)

PREPARATION
Beat the eggs and 150 g of sugar in a bowl with a wood-spoon.

Add the flour with salt and extra virgin olive oil to the eggs mixture, mix all together until you obtain homogeneous soft dough.

Add some milk little by little, stir and now prepare the apples.

Clean and peel the apples, cut them in square pieces and add them to the soft dough already prepared.

Now the mixture is ready to be cooked for this reason butter a pan of 24 cm of diameter and flour it removing the excess of flour, pour on it the mixture and sprinkle it with some sugar as shown in the picture below.

Bake at 180°C for 40 minutes until the surface is slightly golden, check the apple cake is good cooked using a spaghetto. Put the spaghetto in the middle of the cake remove it and if it is dry means that the cake is good cooked.

Apple Tart

The apples are fruits diffuse in Italy that you can use to cook many Italian recipes. There are different kinds of apple: rennet, fuji, royal gala, annurca, stark, granny smith and golden. Each kind of apple has particular characteristics. For example the apples that I use in this recipe are the apples stark. These apples have a red peel, a floury and sweet pulp and they are ideal to prepare this delicious tart!
Suitable for Vegetarians
Crostata di mele






INGREDIENTS (for 8 people)

250 of Flour
120 g of Sugar
1 or 2 Eggs
80 g of Butter at room temperature
2 or 3 Apples
5-6 Macaroons
1 Lemon

PREPARATION TIME: 15 minutes

COOKING TIME: 30 minutes

WINE: Albana di Romagna Passito (White Wine)

PREPARATION
Preheat the oven to 180° C. Place the flour as a fountain on a table, add the sugar and mix them.

Then in the centre of the mixture add the egg and the pieces of butter

and knead until you obtain solid dough. Let the dough stand for 10 minutes;

in the meantime peel the apples

and cut them into thin slices, place them in a dish with the juice of lemon and 1 tablespoon of sugar and let them soak for 10 minutes.

Dampen a sheet of baking paper and put it on the table; place on it the dough and with the help of a rolling pin roll out it 1cm thick.

Now move it on the bottom of a cake tin of 24-cm diameter and 4-cm thick. Sprinkle on the surface of the dough the macaroons crumbled

and arrange the slices of apple over it as shown in the picture below.

Cover all the dough with the apples and bake for 30 minutes until the surface of the apples becomes golden.
