Pizza with White Onion

Pizza with WHite Onion
This is another recipe for Italian pizza made with only 2 ingredients Stracchino cheese and white onion. The preparation is very easy and fast, you need only to spread a little bit of Stracchino cheese on the surface of pizza and place on it the onion that you already cut in very thin slices. Here I used the white onions that together with the red onions are the more sweet tasty onions perfect for pizza. When I decide to prepare pizza with onions I used indifferently the white or the red onions according to what I have available at home, so I like both pizza with white onion or pizza with red onion. 

INGREDIENTS (for 1 pizza): 
2 Tablespoons of extra virgin olive oil 
20 g or 0,7 oz of Stracchino cheese 
1 Big White Onion or 2 small onions

PREPARATION TIME: 10 minutes 

COOKING TIME: 20-30 minutes

PREPARATION 
Prepare and stand the dough for pizza as show here. Spread on the surface of the dough the Stracchino cheese.

Prepare the onion, peel them and cut them in thin slices. Place the onion on the surface of the pizza and add the extra virgin olive oil.

Bake the pizza at 250 C or 482 F for 25-30 minutes. Serve hot.

Pizza with Scamorza Cheese and Bacon

Pizza with Scamorza Cheese and Bacon
This is another recipe for Italian pizza made with bacon and scamorza cheese as main ingredients. I also used here the stracchino cheese spread on the bottom of the dough in order to have a more soft and delicious pizza, and obviously I used tomatoes sauce and mozzarella cheese that are present always in the most famous Italian pizza.

INGREDIENTS (for 1 pizza):
80-100 ml or 1/3 cup of tomatoes sauce
Salt
Oregano
2 Tablespoons of extra virgin olive oil
20 g or 0,7 oz of Stracchino cheese
100 g or 3,5 oz of mozzarella cheese
5-6 thin slices of Bacon
5-6 thin slices of Scamorza cheese

PREPARATION TIME: 10 minutes

COOKING TIME: 20-30 minutes

PREPARATION
Prepare and stand the dough for pizza as show here. Spread on the surface of the dough the stracchino cheese.

Prepare the tomatoes sauce with a little bit of salt, oregano and the extra virgin olive oil. Cut the mozzarella cheese in small cubes. Spread the tomatoes sauce on the top of the stracchino cheese

and add the small cubes of mozzarella.

Bake the pizza at 250 C or 482 F for 15 minutes Then place the slices of scamorza cheese and let them melt a little bit, it will takes almost other 5-10 minutes, pay attention to not burn the scamorza.

When the pizza is ready place on the top the slices of bacon. At this point you don't need to re-bake the pizza because the hot of pizza will let melt the slices of bacon. Serve hot.

Pizza with 4 cheeses

Pizza with 4 cheeses
Here another delicious recipes for pizza. This Italian pizza is usually called “white pizza” because it is prepared without the tomato sauce. On the bottom of the dough instead of the tomatoes sauce I usually spread a teaspoon of stracchino cheese. The main ingredients of this Italian pizza are cheeses indeed it is called pizza with 4 cheeses. The cheeses that I use for this pizza are: the Asiago cheese, the Gorgonzola cheese, the Pecorino cheese and the Mozzarella cheese. The Asiago cheese and the Pecorino cheese that I used here they have a medium maturing and the taste that much more you can feel when you taste this eliciuos pizza is that one of the Gorgonzola cheese.

INGREDIENTS (for 2 pizza)
For the dought follow the recipe that you find here.
1 Teaspoon of Stracchino cheese
150 g or 5,3 oz of Mozzarella cheese
60 g or 2,1 oz of Asiago cheese
60 g or 2,1 oz of Pecorino cheese
60 g or 2,1 oz of Gorgonzola cheese

PREPARATION TIME: 10 minutes + the time you need for the rising of the dough

COOKING TIME: 15 – 20 minutes

PREPARATION
Prepare the dough for pizza as described here. Half an hour before to roll out the pizza start the preparation of the ingredients you need to flavour the pizza and preheat the oven at the maximum degree, in my oven is 482°F but also 572°F is ok. Cut in small cubes the mozzarella cheese, the pecorino cheese, the asiago cheese and the gorgonzola cheese. All the ingredients are ready. You can roll out the dough and flavour pizza.

Start spreading with a teaspoon of stracchino cheese the bottom of the pizza.

Put the pieces of mozzarella cheese homogeneously and then the other pieces of cheese.

Pizza is ready to be' cooked. Bake pizza for 15 - 20 minutes. Put the pizza first in the lower part of the oven so it will cook on the bottom and then after more or less 10 minutes transfer it in the upper part so it will become crumchy on the surface. Pay attention and check the cooking time by time because according to the power of your oven the cooking can change. The ideal number of pizza to cook in a normal size oven is 2, if you put more you will need more time and you have to move the pizza continuosly from one to another lager of the oven. Pizza Prawns and Mushrooms

Pizza Prawn and Mushrooms
This is the Italian recipes for Pizza Sea and Mountain. We usually call this Pizza like this because we combined the sea-food, in this case the prawns, with mushrooms. The preparation is very easy and to obtain a better result you should cook the prawns and mushrooms separately and then place them on pizza. This pizza can be prepared as the traditional Italian pizza that wants on it the tomatoes and mozzarella cheese (here I showed this recipe) otherwise you can also prepare the so called white pizza or the pizza without tomatoes.

INGREDIENTS (for 2 pizza):
For the dough follow the recipe that you find here.
250 ml or 1 cup of Tomatoes puree
250 g or 1 cup of Mozzarella cheese
200 g or 1/2 cup of Mushrooms fresh or frozen (better Porcini)
150 g or 1/2 cup of Prawns
Salt
3 Tablespoon of extra virgin olive oil
Oregano
Parsley

PREPARATION TIME: 15 - 20 minutes is the time you need to obtain well homogeneous dough. 4-5 hours of rising. 15 minutes of preparation, the time you need to put on pizza the dressing you like more
COOKING TIME: 20 – 25 minutes

PREPARATION
Prepare the dough for pizza as described here. Half an hour before to roll out the pizza start the preparation of the ingredients you need to flavour the pizza and preheat the oven at the maximum degree, in my oven is 250 Celsius degree (482 F) but also 300 C (572 F) is ok. Clean and cut in cubes the mushrooms, wash and clean the prawn removing the shell. When mushrooms and prawn are ready preheat in a pan 2 tablespoons of extra virgin olive oil. When the oil is hot put in the pan the mushrooms and prawn and let them cook for about 10 minutes stirring continuously.

Sprinkle with salt and parsley and cook for 5 more minutes. Cut in small cubes the mozzarella cheese.

Pour in a bowl the tomatoes puree,

add 1 tablespoon of extra virgin olive oil, salt, oregano and mix. Now all the ingredients are ready you can roll out the dough and flavour pizza.

Start with the tomatoes, spread on the surface of pizza the tomatoes very well covering the entire surface until the edge.

Cuoricini di Pizza

Some lovely sweet hearts for your Saint Valentine's day dinner!

INGREDIENTS FOR THE DOUGH (for 2 people)

200 g of Flour
1 Tablespoon of extra virgin olive oil
20 g of Yeast
150 ml of Milk
Salt

INGREDIENTS FOR THE DRESSING ( for 2 persons)

4 Anchovys
100 g of Cheery sweet tomatoes
1 Tablespoon of extra virgin olive oil
1 Clove of garlic
Salt
Pepper
1/2 Red or yellow pepper
3-4 Small artichokes pickles

PREPARATION TIME: 1 hour and 45 minutes

COOKING TIME: 15 minutes

DIFFICULTY: medium

PREPARATION
Heat the oven to 200 °C.
Put the flour in a bowl.
Pour the milk in a cup and dissolve in it the yeast. When yeast is dissolved add the milk to the flour together with the extra virgin olive oil and some salt.

Now mix all together until you obtain a solid dough. If the dough is too soft add some flour and continue to mix.
Put the dough in another bowl, make a cross on its surface, cover with a napkin and let it rise for about an hour.

When the dough is rised, divide it into 8 small pieces and give them the shape of heart.
When all the hearts are ready put them in a bakin pan covered with a sheet of a baking paper.

Heat 1 tablespoon of extra virgin olive oil in a frying pan.
Wash, peel and chop 1 clove of garlic. Add it to the oil and wait until it gets brown.
Wash and cut into pieces the cherry sweet tomatoes and add them to oil, season with salt and pepper and cook for 5 minutes.

When the sauce is ready put it on the surface of the hearts.
Wash 1/2 of red or yellow pepper, cut it into strips and put them on some hearts. Dress the other with some anchovy or some small artichokes pickles.

Bake for 15 minutes at 200 °C.
Serve hot.
